Breakfasts are crazy.
But I’ve found a secret sanity saver!
Sweetly filling and still a “good for you” choice. It’s super easy to make and easily doubles or triples, which I love to do because it freezes (uncooked) beautifully. you do need to make this the night before and let it set in the fridge for at least 8 hours. If coming from the freezer, be sure to pull it out the night before also.
We have fun playing with a variety of toppings on this one. Everything from fresh fruit, dried fruit, brown sugar and cinnamon, and even syrup. But truthfully, we make this dish disappear even without anything on top. 🙂
Baked Oatmeal (must be started the night before serving)
1/2 cup canola oil
3/4 cup white sugar
1 cup milk
1/2 tsp. salt
1 tablespoon baking powder
3 cups quick cooking oats
Beat together oil and sugar. Mix in eggs, milk, salt, baking powder, oatmeal. Beat well then stir in raisins. Pour into lightly greased pie pan. Sprinkle with topping mix. Cover with plastic wrap. Refrigerate overnight. In the morning, preheat oven to 350 degrees. Uncover and bake until firm – approximately 25 minutes.
