Sausage Basil Manicotti

This super simple Italian classic hits a home run with the addition of sausage and pesto! It also happens to be my favorite birthday dinner 🙂

1 jar spaghetti sauce
1-3/4 cups Ricotta Cheese
1-1/2 cups shredded Mozzarella Cheese
1/2 cup  grated Parmesan Cheese
1 egg, beaten
1/4 cup  pesto
1/2 lb cooked, drained ground sausage
12 cooked manicotti shells, sprinkled with salt (to keep from getting mushy)

Preheat oven to 350°F.
Spread enough sauce to lightly cover the bottom of a sprayed 9×13-inch baking dish.
Mix cheeses, egg, sausage, and pesto until blended; spoon into a ziploc bag.
Cut a small corner from bottom of the bag and fill the cooled shells by squeezing the cheese mixture into both sides of each shell.
Place filled shells in the baking dish.
Top with remaining sauce and sprinkle with mozzarella.
Cover with foil and bake for 40 minutes.

This dish is made complete (as most are), with these fabulous Sweet Dinner Rolls!
